I know, I know...it's been 3 months since I left y'all hanging. Here's where we were...
In my refrigerator I had the following:
* smoked turkey sausage
* zucchini
* yellow squash
* onion
From the garden:
* basil
* parsley
Chop the link of smoked turkey sausage and the following veggies:
1/2 medium sized onion
1 zucchini
1 yellow squash
DIRECTIONS:
Sautee 2 teaspoons of minced garlic and 1/2 of a medium sized chopped onion in approximately 2 tablespoons of EVOO just until the onion is sweating (about 3 minutes).
Add the sausage, squash and zucchini. Season with Tony Chachere's Hot & Spicy, black pepper and red pepper flakes to taste.
Sautee for an additional 4-5 minutes. Once the veggies have softened to your liking, add a can of Italian diced tomatoes. Cover, lower heat and let simmer for 5 minutes.
Serve over pasta. Add fresh basil, parsley and shredded parmesan cheese.
Here is a different version. Add mushrooms and about 1/2 a bag of fresh spinach after you add the can of diced tomatoes. I think the sausage here is from a leftover link I had from a BBQ lunch the day before. Here's a pic I had on file:

New Recipes Coming...
I am trying to replicate P.F. Chang's Chicken Lettuce Wraps. Yes, I realize that there are a ton of "recipes" on the internet, BUT most of them involve a lot of work (dicing up chicken breasts) or have too much sodium and sugar (in the hoisin sauce and soy sauce). My first foray was semi-successful using ground turkey, white wine vinegar, chili sauce and low sodium soy sauce (among other things), but it's still not there just yet. So stay tuned...I plan to give it another go over the weekend.
Before I left the house this morning, I glanced in the refrigerator to see what was on hand for tonight's dinner. Here's what I have:

* tomatoes
